This Japan chicken recipe might be the quickest chicken I’ve ever made. Twenty minutes, a handful of ingredients, and a cashew sauce so creamy and peppery that you simply can’t have enough!

Despite the name, this Japan chicken has nothing to do with Japanese food. It’s actually from the Erode region in Tamil Nadu, and nobody quite knows how it got the name. But honestly, once you taste it, the name is the last thing on your mind.

The sauce is what makes this dish. It’s creamy, peppery, and so different from the usual red or brown gravies we’re used to making at home. It reminds me a little of my chicken kali mirch and chicken korma, but comes together in half the time!

Ingredients for Japan Chicken

  • Chicken Thighs: Boneless, cut into 2-inch cubes. Thighs stay juicy even after frying & hold the sauce well
  • Marinade: Ginger garlic paste, pepper, egg white, maida, and cornflour. 
  • Cashew Powder: The base of the white sauce and what gives it that signature white color and creaminess 
  • Milk: Full-fat for the best results
  • Garlic & Green Chillies: For aroma and slight heat. You can increase the number of green chillies if you prefer it more spicy 
  • Butter: Used alongside oil to add a layer of richness and savoury flavor  
  • Seasoning: White pepper, salt, and a pinch of sugar for balance and flavor
  • Oil: Any neutral cooking oil for shallow frying the chicken. You can also air fry if you prefer a lighter version
  • Coriander Leaves: Used as garnish for freshness

  • Don’t skip the egg white in the marinade. It’s what gives the erode chicken that light, crispy coating when fried. Without it, the maida and cornflour won’t stick as well.
  • Mix the cashew powder into the milk immediately. If you add the cashew powder to the pan before the milk, it’ll clump up, and you’ll spend ages trying to smooth it out.
  • Keep the sauce on low heat once the milk goes in. High heat will cause the milk to split, and the sauce will lose that silky, creamy texture.
  • Don’t overcrowd the pan while frying. Fry the chicken in batches so each piece gets evenly golden. Overcrowding drops the oil temperature and makes the coating soggy instead of crispy.
  • Add the fried chicken to the sauce right before serving. The longer it sits in the sauce, the softer the coating gets. You want that contrast between the crispy chicken and the creamy gravy.

Storage Tips

  • In the fridge: You can store the fried chicken and sauce separately in airtight containers for up to 2 days. Keeping them apart prevents the coating from going soggy.

Ingredients

Marination

  • 250 gms boneless chicken thigh cut into 2 inch cubes
  • 1 teaspoon ginger garlic paste
  • ½ teaspoon pepper powder
  • ½ egg white
  • ¼ teaspoon salt
  • 1 tablespoon maida
  • 1 tablespoon cornflour

Other

  • ½ tablespoon cooking oil +2 tablespoons for shallow frying chicken
  • 2 teaspoon butter
  • 1 ⅓ tablespoons finely chopped garlic
  • 3 green chillies sliced diagonally
  • 1 ½ cups milk
  • 3 tablespoons cashew powder
  • A pinch sugar
  • ½ teaspoon salt
  • ½ teaspoon white pepper powder
  • 1 tablespoon finely chopped coriander leaves

Instructions

Marination

  • Take all the ingredients for marination in a bowl, toss to combine well and set aside for 20 minutes.

To shallow fry

  • Heat 2 ½ tablespoons of oil in a shallow pan, add marinated chicken and fry on medium for 3-4 minutes till they are fried well and turn golden. Do not overcrowd the pan so the chicken gets fried evenly. Fry the chicken in batches and set aside.
    ½ tablespoon cooking oil

To Air fry

  • Pre-heat air fryer to 200C and brush the basket with oil. Add marinated chicken with some gap between each and spray some oil. Air fry for 6 minutes, flip, spray some oil and air fry the other side for 2-3 minutes till they are fried well. Repeat the same for the rest of the chicken

Making Japan chicken

  • Retain ½ tablespoon of oil in the pan and remove the rest of the oil. Add butter and once it melts, add garlic and saute on high for a few seconds till fragrant. Add green chillies and saute for a few seconds.

  • Add milk, cashew powder and mix immediately so the cashew does not get lumpy. Once it starts boiling, set on low, season with salt, white pepper powder, sugar, mix well and cook for 3-4 minutes till the sauce thickens a bit.

  • Add fried chicken & cook on low for 2-3 minutes till the sauce coats the chicken. Garnish with coriander leaves and serve.
