But on days when I don’t have the energy to whip up three separate dishes, I can count on any one-pot recipe to come to my rescue. This claypot Asian chicken and rice is one of my favorite picks for such days. It has that incredible earthy flavour thanks to the shiitake mushrooms, and because the rice cooks in the mushroom soaking water, the whole pot smells so heavenly!
If you’re tired of eating (or making) your usual chicken biryani, you have to save this one pot chicken and rice recipe for your next family dinner. I’ve made it in a claypot here, but you can easily recreate the same dish in a kadai-style stainless steel or non-stick pan you already have at home.

Ingredients for One Pot Chicken and Rice
- Chicken: Boneless chicken thighs work best here as they stay tender and juicy right until the end.
- Rice: Thai jasmine rice is a really good choice, as it cooks up slightly sticky and absorbs flavour really well.
- Shiitake Mushrooms: Dried shiitake mushrooms add a deep, earthy flavour. Plus using its soaking water to cook the rice really alleviates the flavors.
- Garlic, Ginger & Shallots: These give the dish its savoury and aromatic backbone.
- Sauces & Seasoning: Soy sauce, oyster sauce, vinegar, white pepper, and chilli oil add balance and gentle spice.
- Sesame Oil & Cornflour: Sesame oil adds aroma, while cornflour helps lightly coat the chicken and rice.
- Oil: I have used vegetable oil for its neutral flavor

- Use chicken thighs if possible. They stay tender and juicy as they cook gently on top of the rice.
- Don’t skip soaking the shiitake mushrooms. Using that soaking water to cook the rice adds a lot of flavour to the final dish.
- Keep the heat low once the rice starts cooking. This helps the rice cook evenly without burning at the bottom too quickly.
- Tilt the pot carefully at the end. Exposing different parts of the base to the flame helps create those crispy rice bits without overdoing it.

One Pot Chicken & Rice with Mushrooms (Asian Style)
Ingredients
- 2 tablespoons + 1 teaspoon cooking oil divided
- 1 teaspoon finely chopped garlic
- 1 teaspoon finely chopped ginger
- 5 shallots finely sliced
- ½ cup raw thai jasmine rice 105 gms/washed and soaked for 20 minutes
- 3 shiitake mushrooms hydrated & sliced length-wise
- 2 boneless chicken thighs approx. ½ cup, cut into ½ inch cubes
- 1 cup hot water
- 1 tablespoon + 1 teaspoon oyster sauce
- 1 tablespoon light soy sauce
- 1 teaspoon vinegar
- ½ teaspoon white pepper
- 2 teaspoons toasted sesame oil
- ½ tablespoon cornflour
- ¼ teaspoon salt
- 2 teaspoons chilli oil
Instructions
Sauce mix

Mix together all the ingredients mentioned under sauce. Set aside 1-2 teaspoons of the sauce separately to use later as a topping.
Hydrating shiitake mushrooms

Soak shiitake mushrooms in 1 cup of boiling hot water for 10-12 minutes. Drain, reserve the water and slice the mushrooms length-wise.
Marinating chicken & mushrooms

In a bowl mix together chicken, oyster sauce, soy sauce. Marinate for 15 minutes.
Making claypot rice

Heat 1 teaspoon oil in a claypot, add garlic, ginger and saute for a minute until fragrant. Add the drained soaked rice, saute for 1-2 minutes and add ¾ cup hot water (incl.½ cup water used for soaking shiitake) and bring to a boil.

As soon as it comes to a boil, reduce the flame to low and cover and cook for 5 minutes

After 5 minutes, lift the lid and add the marinated chicken and mushrooms in a single layer on top of the rice. Cover and cook on low for 5 more minutes.

Drizzle 2 tablespoons of oil around the edges of the lid in a way that the oil trickles down the sides of the pot into the rice (watch the video to see how this is done).

Now increase the flame and hold the claypot with a mitten or cloth and tilt it around over the flame for 10-15 seconds at time so that different parts of the bottom get exposed to the high flame. This will create a crispy rice bottom that tastes delicious!

Finally, drizzle the claypot rice sauce we set aside earlier, mix gently, cover and rest for 5 minutes. While serving, make sure to get the crispy rice bits from the bottom.
