Golden, Buttery Roasted Cabbage

Cabbage definitely seems to be having a moment lately, and I am here for it. ♡

It’s hearty, budget-friendly, packed with nutrients, and endlessly versatile. But in my opinion, there’s nothing better than roasting it. The high heat transforms those crisp pieces into deeply golden, caramelized bites with tender, almost buttery centers and perfectly crispy edges. I’ve served this to more than a few friends who were convinced they “weren’t cabbage people,” and every single one of them went back for seconds. It’s surprisingly irresistible!

This version keeps things beautifully simple — just olive oil, smoked paprika, garlic, salt and pepper. Roast it under high heat, maybe broil for a minute if you want a little extra char, then finish with a squeeze of lemon or a shower of Parmesan.

Fair warning: I can never seem to stop sneaking bites straight off the sheet pan whenever I make it. I have a feeling you’re going to love it too!
